Summer Salad

*Recipe recommended for summer months and can be heavily adapted based on garden availability

INGREDIENTS

From the Garden

  • 6 cups lettuce from the garden (any kind)

  • 1 cucumber or several baby cucumbers

  • 1 beet, roasted

  • 1/2 cup chopped tomatoes

  • 2 cups watermelon or radishes, thinly sliced

  • handful edible flowers, optional

From Elsewhere:

  • 1 cup corn kernels

  • Salad dressing (vinaigrette recommended)

PREPARATION

  • clean lettuce

  • dice and prepare remaining vegetables into bite sized chunks and mix in with lettuce

  • toss in salad dressing

  • top with edible flowers
